the menu has been devised by world-renowned carioca chef, roman fontanive, who, in 2012, received the italian ospitalità quality certificate, for the original gabbiano, which is awarded by the italian government to restaurants that authentically represent italian cuisine around the world. 

the menu sticks quite closely to traditional italian cooking, with many pastas and risottos taking pride of place, whilst the emphasis on seafood has given an oceanic twist to the proceeding - it is known for some of the most sophisticated italian dishes around, as well as some of the best wines in the city, as the original restaurant was recognized, in 2012, as having the best wine list in rio, by the rioshow food award.
