at a glance

in terms of meat, the local tradition uses goat the most. fish is common too, especially in the islands - among the vegetables the prevalence goes to onion, tomatoes, cucumbers, eggplant and green beans.

there's also a great tendency to use flavoring, especially herbs, like oregano, mint or garlic, along with 'persillade' sauce and some sweet spices, these last details among those present due to the middle eastern influences.

there are several traditional types of wines and beers developed in greece during the ages. another important drink is coffee, from which this cuisine has also spawned a wide array of varieties.
