india was a famous stop on the spice trade route for centuries - cinnamon, cassia, cardamom, ginger, and turmeric long served as currency for the portuguese, british, and persian merchants who traveled through this rich and enchanting region.

india gained independence on august 15th, 1947, after a period of great political and social upheaval - the british empire had ruled india for more than 200 years.

the british initially wanted control of the region for trade purposes, but their intentions eventually took on political and administrative ambitions - once considered the shining jewel in the british empire's crown, india shines on its own in today's culinary world with a varied, eclectic cuisine that makes good use of its abundant spices.
