thailand is a tropical country in the malay peninsula, made up of roughly five different regions, including the central valley, in front of the gulf of thailand, and the highlands in the north and northwest, which house the highest point in the country, doi inthanon.

the other three regions include the southeast coastal area, the northeast, which is widely described as the khorat plateau, and the malay peninsula, which spreads an almost 960 kilometers from the northern central valley to the southern borders of malaysia - the weather in the majority of these regions rarely goes below 13 degrees celsius, or approximately 55 degrees fahrenheit.

because thailand is the only southeast asian country that was not colonized by the west, it was able to maintain some of the original roots of its cuisine, though it has been largely influenced by the country's neighbors within asia.
