the lack of fresh vegetables, difficulties in breeding animals, and the isolation of this territory, make fish scandinavia's staple protein - among the varieties, the queen of this region is salmon.  

trade between rio de janeiro and scandinavia was vibrant during the first part of the 20th century, and some of the first swedish companies in brazil were established as early as before world war i.

in 1947, the swedish association was created in rio de janeiro.  in 1950, the danish association was established, and 5 years later, the norwegian association - in 1994, the scandinavian association of rio de janeiro was created which includes all scandinavian countries.

there are still only a few options for scandinavian food in the state of rio, the most famous is the koskenkorva restaurant, where diners can order a fish smorgasbord (the swedish word for buffet) that includes marinated salmon, two types of herring, salmon paste, trout pâté, shrimp, pickled cucumbers, sausage, potato salad, and other delicacies.  arrow-back      arrow-forward
