the fraldinha, known as skirt steak in english, is a small cut of meat close to the ribs which consists of long, thick bundles of muscle - the fat is removed before serving and coated in salt.

as this cut tends to have a low fat concentration it is known for being one of the lighter options, often preferred by children - it is baked on a grill at medium flame with the thicker part faced towards the heat.
