at a glance

the term 'vegan' was first coined in 1944 to refer to those who do not eat any animal products, including chicken, fish, milk and eggs, and often do not use any animal clothing, such as leather, fur, wool or silk - though eating habits are very similar, vegetarians simply do not include meat or fish in their diet - pescetarians are similar to vegetarians by not eating meat but do include fish in their diet.

in the 70s and 80s brazilian counter-culture began to adopt some of the international and radical culinary movements that were taking root, such as veganism and the macrobiotic diet which largely consists of whole grains and vegetables.

culinary conscientiousness has seen an incredible increase of popularity and has influenced the consumption of organic and vegan produce - more and more establishments dedicating solely on this type of cuisine are popping up in the city - already established or newcoming offering a diverse menu are now including options for vegans and vegetarians.   arrow-back      arrow-forward
