the bread was fading from popularity until a few years ago when residents decided to revive the recipe and showcase how it's made in a century old stone oven. the special stone oven is a collective for the community. located in a century old house in the state park, the oven is lit by wood and produces about 150 loaves of the bread a month-though that number is increasing along with the popularity of the festival. it includes a demonstration on how the bread is prepared and made using ingredients such as pork fat, sweet potatoes and of course cornmeal. the week before the event around 800 loaves are baked, waiting to be sold to hungry visitors. | january | |||
