the next cultural wave that shook up the cuisine of the country was that of the africans, who arrived as slaves to the country from the sixteenth century - with them they brought various ingredients that were added to the national diet, such as bananas, honey, and beans, whilst eventually being able to influence the cooking styles of the cuisine, blending sweet and savory, and adding much color to the dishes.

the nineteenth century saw two more waves of migration, this time from asia, and which both had a profound influence on the peruvian cuisine - first it was the chinese, who came to the country to work on the islands, and in the construction industry, and who brought with them exotic flavors, such as tamarind, and soybean, along with yet more cooking techniques. 

next came the japonese, who taught the nation how to steam cook food, and to be creative with seafood, whilst bringing some spices in tow for good measure - once these populations established themselves in the country, and on the cuisine, a great variety of new 'peruvian' dishes were developed, with some of the favorites found in restaurants all over the world.  arrow-back      arrow-forward
