the most popular dish, often considered peru's national dish, is ceviche, which blends raw seafood, usually white fish, in a spicy citrus sauce, and is served with sweet potatoes and corn - the key of the dish is the acid from the citrus fruits, which partially cooks the seafood, and gives it a unique flavor.

another popular dish is the traditional pachamanca, which is a time consuming dish made up of meats, vegetables, and herbs - the meal is cooked underground, using heated stones, adding a certain individuality to the dish.

pisco is the favored liquor of the country, born in the ica valleys, by fermenting grapes - the drink is an acquired taste, but is drank in the bucket load in peru, with the pisco sour cocktail considered the peruvian national drink.
